In a large bowl measure 6 cups of warm water.
Add 3 TBSP yeast and 3 TBSP salt.
Then mix in about 13 cups of flour. I use my Bosch mixer but this is easy to mix with a wooden spoon and your hands.
Let it rest a bit. I dump the dough out onto the floured counter, wash the bowl and oil it. Then return the dough to the oiled bowl.
Take out what you want to use, shape it on your cookie sheet or cast iron pan and let it rise till nearly doubled. Loosely cover the remainder and put in the refrigerator to use later. It just needs a few hours to rise after being chilled.
I get about 2 dozen sandwich rolls and 4 rustic loves from this recipe. It also makes great pizza crust!
Bake at 350

What kind of flour do you use? Looking forward to trying this recipe.
I enjoy reading your blog and wish I was disciplined enough to keep up with one. I think my family would love it if I could keep pictures and stories coming. Ahhhh . . . it's all I can do to keep up with what I have going.
