This has been my favorite dish to take to parties and picnics this summer. It's from A Family Journal by Rita Munn. (I double this.)
I package frozen or can of white shoe peg corn
I package or can of yellow corn
2 large colored peppers, diced
1 red onion, chopped
1 cup of Monterey Jack cheese, cubed very small
1 can of black beans, drained and rinsed
Mix all ingredients together, stirring well. Add 3 TBSP of olive oil, salt and pepper to taste, maybe a little ground cumin if your family likes that. Toss gently. Refrigerate at least four hours.
It's pretty and my children like it!

I made this yesterday to go with our cowboy steak sandwhiches. It was delish!! Thanks for sharing this recipe, I had forgotten about it until now!
