Lunches around here are pretty easy. We usually have leftovers except bread baking days. Then the kids will slice and eat one or two loaves of fresh bread and butter for lunch. Add some sliced cheese and fruit and they may be able to go a whole hour or so before the next meal. (Some days it does feel as if the eating never ends.)
Another favorite lunch is tortillas with refried beans and cheese. We make homemade tortillas sometimes. They taste far better than store bought, but do take a little time and arm strength to make enough for this crowd. I have my sights on an electric tortilla maker.
