Our Favorite Oatmeal Cookies

(This recipes makes 7-8 dozen)

4 eggs
4 cups brown sugar
2 cups butter
2 tsp vanilla
4 cups flour ( I've used white flour, whole wheat or a mixture)
2 tsp baking soda
1 tsp salt
6 cups instant oats

Mix dry ingredients well, except for the oats, and set aside.
Mix wet ingredients.
Blend both, then add the oatmeal.

Bake at 375 degrees
