Reading the Loveliness of New Years Resolutions ,it sounds as if many of us are resolving to make our lives less cluttered and more focused on living the faith. I don't normally do well with New Years Resolutions but I have a made a few simple changes that will help us prioritize around here.
Our priorities are to get to Mass on the first Fridays and confession once a month. There is also an evening Mass we might make once a week. Another is the schooling. With two sacraments coming up and high school looming large we have a lot prepare for.
Like every other mom in the country, I did a lot of de-cluttering and organizing after Christmas. That always helps. The other plan is a one week menu. I mean the same menu every week. At least till my husband can't stand it anymore.
I need it that simple. I need the kids to be able to do more of the prep. I need to be able to shop at one grocery store. I need to pinch as many pennies as possible.
I'm thinking there will be enough variety with invitations out, feast days, birthdays and company days.
The menu was chosen for high ranking of favorites, easy expandability for drop in guests, good nutrition and thrift. Basic, homey food.
- Sunday: Roast beef with vegetables in the crockpot, biscuits, salad and homebaked dessert. (Mostly prepared the day before and ready in the fridge for cooking.)
- Monday: Some variation on chicken/rice casserole, salad and applesauce.
- Tuesday: Tacos, refried beans, frozen corn on the cob and sliced colored peppers.
- Wednesday: Grilled or baked chicken breasts, pasta, squash and broccoli.
- Thursday: Meatloaf, mashed potatoes, cooked carrots,and frozen spinach.
- Friday: Homemade pizza, salad and sparkling water.
- Saturday: Spaghetti, garlic bread, salad and canned pineapple or mandarin oranges.

For the first time in my life, I am going to try this as well. I was thinking of a two week plan, but one week sounds so simple. I think my kids would pick exactly the meals your family has chosen!

mmm...sounds good! I think I might try to figure out something like this too...I think I will throw in a soup of the week. It is great for any leftovers and the leftovers of that are very good for lunches!

Your menu sounds like a good plan.
We have a weekly lunch menu that pretty much stays the same but does allow for flexibility. I posted about it yesterday.
I'm not sure we could do the same dinner menu every week but possibly two weeks at a time would work for us.
You've got a plan though. Praying it is working out for you.
